Instant pot Stuffed Baby Eggplant curry or also known as gutthi vankaya koora is a specialty in south Indian household. The Eggplant is stuffed and then cooked in a gravy to make this awesome curry. This super delicious curry goes very well with Rice or Roti.

Baby purple eggplants are easily available at Indian/Asian groceries and select the one which are in rich purple color and with no cuts/bruises. Sometimes whitish green eggplants are also available in markets but they tend to be little bitter so it is always a hit or miss with I suggest using purple eggplants.

Eggplants are low in calories, nutritious and tasty. For this Instant pot Stuffed Baby Eggplant curry I used peanut stuffing which makes eggplant extra delicious but if you are allergic to peanuts, you can use cashews.


** If you don’t have Instant Pot, follow the same method on stove top in a wide pan and cook till eggplant is tender.
