Vankaya aka Egg plant is a regular vegetable in Indian household especially in my Andhra home. I mention this all the time but I will tell you again, Egg plant is considered as king of vegetables and a must in special occasions/festivals. This Vankaya Menthi Karam, curry is very very flavorful and finger licking good. This curry is also low carbs (relatively) and diabetic friendly. The fenugreek seeds used in the curry are very helpful for diabetic patients. Other spices and dals used helps in increasing the protein content and also helps in digestion. The spice mix can be made ahead and can be used whenever required. The Spice mix also goes very well with Tindora (Dondakaya) and Okra etc. Overall this is so easy to make and can be done everyday effortlessly and enjoy with Rice and Roti.
