This curry has gorgeous lush orange and perfect amount of spice which is a favorite in anytime of the year.
Dum Aloo || Baby Potatoes Curry in Instant Pot Ingredients Baby Potatoes - around 15 Oil or ghee - 2 tbsps Cumin seeds - 1 tbsp Onion - 1/2 , thinly sliced Ginger Garlic paste - 1.5 tbsp Tomatoes - 4 medium chopped Garam masala - 2 tsps Turmeric powder - 1 tsp Coriander powder - 1.5tbsp Red chili powder - to taste salt - to taste cashews - 1/3 cup, (soak and grind into smooth paste). water - 1 cup or as needed Cilantro - to garnish Instructions Put instant pot on saute mode high Add ghee, let it get hot. Add cumin seeds, fry for 1 min Add onions and fry well till golden brown. Add ginger garlic paste and fry for 2 mins. Add tomatoes and fry till mushy. Once mushy, add garam masala, coriander powder, red chili powder and turmeric powder, mix well. Add salt to taste. Add cashew paste and mix well, fry for 2 mins Add washed and peeled potatoes, mix well. Add water till potatoes are just covered. Turn off saute mode Put the lid, vent to sealing position and do manual high for 10 mins. Do natural pressure release Add cilantro to garnish Serve hot with Rice or roti or Naan.

Notes : You may need more or less than 10 minutes of cooking depending on the size and type of potatoes using. If your potatoes are undercooked then you can do add some water and do manual 3 to 4 mins again OR pour some water and put it on saute mode covered till they are cooked.
