Indian Bhindi Masala | Okra Stir fry with spices | Okra curry

Indian Bhindi Masala is a delicious stir fry side dish you can make for rice or bread. Bhindi = Okra, also known as Bendakaya, Vendakkai etc. The process may look complex but I promise its very easy and trust me its Deeeelicious.. ♥ 

Okra or Bhindi is a delicious and delicate vegetable, you need to cook it carefully in order to avoid gooey or sticky okra. If you cook for long time then its going to over cook and get mushy.. so I will tell you how to cook with few tips and tricks

Whenever you cook with Okra or Bhindi then first step is to make sure that they are completely dry when you chop them. So for this I wash the okra very well and then pat dry using a cloth or paper towel. If you have time then you can let them air dry for few hours. This step will reduce the gooeyness in the okra since there is no moisture to interact.

Also you can slightly grease your knife with oil to avoid sticking to the knife. I always cut my okra into 1/2 inch round pieces but you can cut them into thin long slices. 

You can customize this dish by using the spices you like, you can add some roasted peanuts for a crunch or top off with some fresh coconut for some healthy fats and texture, Options are endless.!

Indian Bhindi Masala | Okra Stir fry with spices | Okra curry

  • 2-3 cups Chopped Okra, 1/2 inch round slices. ((check notes))
  • 1 small Onion (thinly sliced)
  • 2 small Tomatoes (finely chopped)
  • 2-3 cloves Garlic (finely chopped)
  • 3 tbsps Oil
  • 1/2 tsp Cumin seeds
  • 1 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 1 tsp Amchur powder(dry mango powder) (reduce if tomatoes are sour. )
  • 1 sprig Curry leaves
  • Salt (to taste)
  • Red chili powder (to taste)

Frying okra

  1. Take a non stick pan and add 1.5 tbsp of oil. Once it is hot add okra

  2. Sprinkle some salt and fry them till they are cooked without covering with lid. 

  3. This will take around 8-10 minutes. Stir in between to prevent burning at the bottom. 

  4. Once they are fried well, remove them on a plate. keep aside.

Making Bhindi Masala

  1. In the same pan, add 1.5 tbsps of Oil and once oil is hot add cumin seeds, curry leaves. Fry till cumin seeds crackle.

  2. Add onions,garlic and fry till they get golden. 

  3. Add tomatoes and fry till they are mushy and almost dry, there should be little moisture left. 

  4. When tomatoes are done, add red chili powder, coriander powder, garam masala, amchur powder, Salt to taste(keep in mind we added some salt while frying okra). Mix well and fry for a minute. 

  5. Now add the fried okra and mix well to coat the spices to okra. Fry for 2 minutes and turn off the heat. 

  6. Serve Hot with Rice or Roti.! 

  1. Wash the okra well and dry them before chopping them. This will prevent goeeyness or stickyness.
  2. Frying the okra in open pan helps remove the slimyness from okra. 
  3. If you don’t have coriander powder or garam masala then you can use curry powder too. 
  4. If you don’t have amchur powder(dry mango powder) you can use some lemon juice instead at the end before turning off the stove.
