Raitha || Indian Yogurt Condiment || Simple Onion Raita
Raitha is a simple condiment which is made of Yogurt and vegetables(like onion, carrot, cucumber, beetroot etc). It is served along with Rice dishes like Biryani’s, Pulao’s or even with Parathas (Stuffed Flat bread).
Raitha helps cut down the spice from the main dishes like Pulao or Biryani, it has a very cooling effect on the tummy.! Many variations are there to this popular side dish but the most common one is Onion Raita.
You can add either thinly grated raw vegetables or cooked vegetables in the Raita addition to the onions. Onions, carrot, beetroot, cucumber, raw mango, tomatoes, boondi(crispy chickpea balls), mint leaves, cilantro, green chili, Pomegranate etc. Really the combinations are endless and you can even add fruits like pineapple and mango for a sweeter version of it.
Some other names synonymous to Raitha can be Yogurt chutney, Indian Yogurt Salad, Yogurt Sauce etc.
For best results always use Whole milk Yogurt (Full fat) and you can adjust the consistency of the Raitha depending on your taste. Some like it really thick similar to pudding consistency and some like it on the thinner side.
Always serve Raitha chilled 🙂 Garnish with Cilantro, sprinkle of black pepper or red chili powder. I also even like to add some roasted cumin powder.
Serve Raitha with the following :
