Mustard greens paratha | Sarson ka Paratha | Sarson ka Roti

 Mustard greens or also known as Sarson are popular in winter season. When I saw plain mustard greens at the market, I decided to get them to make some healthy flat bread from it. This Sarson ka Paratha  is so good and I just loved it.

Mustard greens are a powerhouse of nutrition and these benefits are good enough to eat them, if you are not a big salad person, then try these  Sarson ka Paratha and I am sure you will enjoy them 🙂

Mustard greens stems are not edible, they are very fibrous. So make sure you de string the leaves, sometimes even the big leaves have some thick veins, so remove them as well.

Mustard greens paratha | Sarson ka Paratha | Sarson ka Roti

  • 1 big bunch of Mustard greens (chopped)
  • 2.5 cups Whole wheat flour
  • 1 tbsps Oil
  • 1 small Onion (finely chopped)
  • Red chili powder (to taste)
  • 2-3 tbsps Golden flax meal (optional)
  • Oil or ghee (for roasting the parathas)
  • 1 tbsp Coriander powder
  • Salt (to taste)
  • Water (as needed to make dough)

Making the Dough

  1. De string the mustard greens, discard the stems and finely chop the leaves.

  2. Take a pan and 1 tbsp of oil. Once oil is hot add onions and fry till golden brown

  3. Next add the chopped mustard greens, fry till they are cooked to dry.(Initially they ooze lot of water)

  4. Once the greens are dry, add red chili powder,coriander powder. Mix well and turn off the heat.

  5. Now combine wheat flour, flax meal, salt, mustard greens mixture and water to make a dough.  Add water bit by bit.

  6. Dough should be soft and pliable but not sticky. rest the dough for 15 to 30 mins. 

Making the paratha

  1. Take a lime sized ball of dough, dust it with wheat flour on both sides.

  2. Roll the dough ball into a round flat paratha. In between you can dust with flour if the dough is sticking.

  3. Now shake the excess flour from the rolled paratha and transfer it on to a hot griddle.

  4. Cook on both side till golden spots are seen. 

  5. Take the cooked paratha, apply ghee on both sides. 

  6. Place the parathas in a covered box, so that they don’t dry out. 

  7. Serve them with Yogurt and curry of your choice.! 

  1. You can add any spices while making the dough. 
  2. You can also stuff the mustard greens mixture instead of mixing it directly into the dough.
