Instant Pot Potato Cauliflower curry | Aloo gobhi

Instant Pot Potato cauliflower curry is delicious and very easy to make. Makes a super side dish for rice, roti, tortillas etc. You can make this curry dry or with gravy but either way its delicious. 

Aloo gobhi is very famous is in India, especially in North India. It is mildly spiced so that kids can also enjoy it. This makes excellent choice for lunch box as well. 

This recipe is vegan but ofcourse you can add butter/ghee instead of oil if you want. 

Most people like their aloo gobhi dry but in my home, especially my husband prefers the gravy version. So I made this curry with gravy but there are instructions in the recipe box to make it dry. So many might not like my version of making aloo gobhi on the wet side but like I said you can make it dry as well.

Instant Pot Potato Cauliflower curry | Aloo gobhi

  • 1-2 tbsp Oil (or Butter/ghee)
  • 1/2 tsp Cumin seeds
  • 1 small Onion (finely chopped)
  • 1 Green chili (finely chopped (adjust to taste))
  • 1 tbsp Ginger Garlic Paste
  • 2 small Tomatoes (finely chopped)
  • 2 medium Potatoes (cut into 1 inch cubes)
  • 1/4 head Cauliflower (cut into big florets)
  • 1 tsp Turmeric powder
  • Red chili powder (to taste)
  • 1.5 tbsps Coriander powder (or curry powder)
  • 1/2 tsp Garam masala
  • 1/4+1/2 cup water (or as needed)
  • 2-3 tbsps Cilantro or coriander (chopped, for garnish)
  • salt (to taste)
  1. Put instant pot on saute mode moe high

  2. Add oil, once oil gets hot add cumins seeds and fry for 30secs to 1 min till they crackle

  3. Now add onions, green chili and fry till onions turn golden. Add little salt so that onions cook faster. cover with lid if you want.

  4. Then add ginger garlic paste and fry for a minute. 

  5. Add tomatoes and fry till they get mushy. 

  6. Now add potatoes, 1/4th cup water and cook till potatoes are 50% done. Cover with lid so that potatoes cook faster. 

  7. In between stir the potatoes so that they dont get stuck to the bottom of the pot. Add extra water if needed. 

  8. Once potatoes are 50% done,then add turmeric powder,coriander powder, garam masala, red chili powder, cauliflower florets and mix well. Add salt if needed.

  9. Turn off saute mode.

For Dry curry

  1. Add 1/4 cup water(40 ml), mix well. 

  2. Put the lid and vent to sealing position. 

  3. Do manual low pressure 2 mins and quick release. 

  4. If there is little water/moisture, do saute mode till the water evaporates.

  5. Garnish with cilantro.

For gravy curry

  1. Add 1/2 cup water(80 ml), mix well

  2. Put the lid and vent to sealing position. 

  3. Do manual low pressure 2 mins and natural release. You can do quick release as well

  4. Garnish with cilantro.

  1. I took equal quantities of potatoes and cauliflower. 
  2. The pot should be clean and nothing should be stuck on it when we pressure cook it. If anything is stuck on it, then you will get BURN sign
