Low carb and Keto Potatoes with Radishes
If you are doing a low carb or keto diet, then I understand the cravings for those yummy potatoes.! But they are full of carbs .. well no problem, we have red radishes to mimic the taste of potatoes. Surprisingly Red radishes tastes very close to potatoes and they are low carb and keto friendly Yay 🙂 . So try this easy Low carb and Keto Potatoes with Radishes that can be made under 30 minutes.
Radishes give that starchy texture and taste without all those carbs and they are also very inexpensive, I got three bunches(w/ leaves) for $5 at farmers market.! Use greens in salads or saute them, so there is zero waste. I believe red radishes are best to use in place of potatoes. White radishes are more pungent than red ones so I dont think they will be a good substitute but you can try if you want.( I didn’t.!)
I also added some snap peas for crunch but you can absolutely omit them if they dont fit under your macros. I like to make a big batch of these Low carb and Keto Potatoes on the weekend and store in the fridge for the rest of the week. Whenever I am hungry or packing sides for my lunch, I just toss it in the microwave and Voila I am good to go.!
To keep it simple and added only Salt to these Low carb and Keto Potatoes but you can add any seasonings like paprika, pepper, garlic powder, onion powder etc. You can also roast them longer for a crispy texture on the outside.
Macros from (1 Kilo Radishes,180gms Snap peas and 2tbsps Ghee)
Calories – 475
Net carbs – 26.5 gms
Protein – 11.1 gms
Fat – 29 gms
The recipe makes 10 servings and each has only 2.65 net carbs with only 47.5 calories. *

Low carb and Keto Potatoes with Radishes
- 2 tbsps Ghee/Butter/Olive oil
- 1 Kg Radishes (washed and quartered)
- 180 gms Snap Peas (optional)
- Salt (to taste)

Take a pan on medium heat and add ghee.

Add radishes,salt and mix well.

Cover with a lid and cook on med-high heat. Stir in between every 4 to 5 minutes to ensure even cooking

Once the radishes are 95% done, add in snap peas and cook on open flame for 3-4 minutes.

Season withsalt as needed.

Low carb and Keto Potatoes with Radishes are ready to serve.
