Berry cake with frozen berries | Triple Berry cake

I have so many frozen mixed berries that needs to be used up along with bunch of eggs. So decided to make this Triple Berry cake with frozen berries and eggs. It is so easy to make and the cake is just sweet enough, perfect tea time accompaniment or a sweet treat in snack box.! 

You can also use fresh berries if you would like, blueberries and strawberries work great. You can make icing,glaze or frosting for this cake but I didn’t add it, as I wanted this cake to be light. This cake is a great option after dinner dessert as it is light and aptly sweet. When mixing berries in the cake batter, they slighly mash/crush and give a beautiful marble effect to the cake, love how gorgeous it looks.! 

I used mix of frozen raspberries, blueberries and blackberries (yes that bag from Costco 🙂 ) You will need two cake pans of 8-9 inch approx or you can make in a big square pan as well. You can use brown sugar, honey, erythritol etc in place of sugar. For best results, never eyeball the ingredients when baking, use precisely measured ingredients and follow the steps to the mark.

Berry cake with frozen berries | Triple Berry cake

  • 4 cups Berries ((fresh or frozen))
  • 1.5 tbsp Flour
  • 1 cup Butter (room temperature)
  • 4 eggs (room temperature)
  • 3 cups All purpose flour or Maida
  • 1.5 cups Sugar ((1/2 cup more for more sweetness))
  • 1.5 tbsp Vanilla extract
  • 2 tsps Baking powder
  • 1/2 tsp Salt
  • 1 cup Half and Half ((or full fat milk))
  1. Preheat the oven at 350F. 

  2. Toss the berries in 1.5 tbsp of flour. this will prevent the berries from sinking down to bottom when baking.

  3. In a bowl mix and beat the butter and the sugar until light and creamy (4-5 mins)

  4. Add vanilla extract and mix well. 

  5. then add eggs slowly one at the time, mix well till eggs are well combined.

  6. sieve/sift flour,salt and baking powder in a bowl and add slowly in 2-3 batches to the butter+egg mixture.  Add in the half and half while adding flour so that it will be easy to mix.

  7. Fold in the flour coated berries to the cake batter.

  8. Pour the cake batter into two 8-9 inch cake pans(grease them well or use butter paper or parchment paper).

  9. Bake at 350F for 45-50 mins or until toothpick inserted in the center comes clean. Depending on the oven, times may vary slightly. 

  10. Completely cool down the cake and serve with toppings of choice.

  • There is a cup of milk listed in the ingredients. But the use of milk is not mentioned in the steps. Can you clarify about the same???

  • I was wondering if you stack and frost the 2 cakes or just serve with whipped cream or vanilla ice cream? Thanks! I have frozen berries to use up and I’m getting tired of shakes and smoothies!

    • Yes I also got tired of smoothies and shakes .. so made this cake 😍 .. I didn’t do frosting as I wanted it to be simple but sure you can do frosting or glaze on top. I suggest not to stack, just do it individually. If you are serving with vanilla ice cream then there is no need for frosting. I apologise for late reply.
