Keto Broccoli cheese fritters or pancakes are super delicious and you can trust me on this, why? Because I think broccoli tastes like grass and my broccoli hating body loved these yummy fritters. These are the best broccoli fritters out there and these are low carb-keto too.

I love how these can be prepared in less than 15 minutes for a quick breakfast or snack, you can even have it for lunch/dinner 😉  If you don’t like broccoli at all then substitute cauliflower.

You can store the fritter mixture in the fridge for up to a day but no more than that. Make sure you cover it with air tight lid.

Ingredients

  • 170 gms Chopped Broccoli
  • 90 gms shredded Cheddar cheese
  • 2 Eggs
  • 1 tbsp Oil
  • Salt - to taste
  • Seasoning (I used Cajun) - to taste
  • Black pepper - to taste
  • 1 - 2 tbsp Water

Instructions

  • Take the chopped broccoli in a microwave safe bowl and sprinkle some salt + water on it. Microwave it for 4 minutes, till broccoli is tender.
  • If you don't have Microwave then do it on a stove top in boiling water and drain the broccoli of excess water. 
  • Next whisk the eggs well and salt, seasonings and pepper to it. mix well again. 
  • Now add beaten eggs, cheddar cheese and mix well to combine. 
  • Now put a tablespoon of oil on a medium hot pan. 
  • Add a spoonful of broccoli mixture on the pan and gently spread into a thin pancake. 
  • Cook on both sides till golden brown and crispy. 
  • I made total of 6 pancakes and served 3 for one person. 
  • Serve hot with sugar free ketchup or enjoy as it is.!

  1. 1 tbsp of oil was enough for me to cook all the pancakes as I was using Non-stick pan but you may need more oil.
