Bottle gourd stew – Anapakaya/Sorakaya pulusu – Instant pot
Bottle gourd stew is so simple to make and very delicious. Bottle gourd is a very light vegetable, more in water content and low calorie. It is so versatile, you can make curry, stew, chutneys and also use in soups/sambar.
In this post I show you how to make in Instant pot but you can make it on stove top as well.
Bottle gourd is known as Anapakaya or Sorakaya in Telugu and Dudhi in Hindi.
Some benefits of Bottle gourd:
- Bottle gourd useful for better digestion.
- Aids in weight loss. Especially the bottle gourd juice.
- It is cooling, calming, diuretic and anti-bilious.
- The B vitamins assist in increasing the body’s metabolic rate to better digest fats, proteins, sugar and carbohydrate.
- Bottle gourd helps in reducing high blood pressure and bad cholesterol
- The fiber and the minerals in the bottle gourd helps with flatulence (kills intestinal parasites), constipation etc.
- Vitamin C and Zinc in Bottle gourds are anti aging. So bottle gourd juice/paste can be applied to face as a face mask and many more….
If you make the Bottle gourd stew on the thinner side, it is best served with Rice. If you make it on the thicker side you can serve with rice as well as Chapati’s/Roti’s.
For Stove top:
Follow the same instructions below in a wide sauce pan till step 6. Next cook with a covered lid till the bottle gourd pieces are tender
You can use a stove top pressure cooker to make the stew, cook for 2 whistles.
For Instant Pot:
Bottle gourd Stew
- 1 to 2 tbsps oil
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1 sprig Curry leaves
- 1/4th cup onions (chopped)
- 3 to 4 pods Garlic (crushed)
- 2 cups Bottle gourd (Peeled and cubed)
- 1 inch sized Tamarind ((extract juice from it))
- Water (as needed)
- 1 tbsp Jaggery or Sugar (or as desired)
- Cilantro (to garnish)
Spices
- 1 tsp Turmeric powder
- 1.5 tsps Coriander powder
- Red chili powder (to taste)
- Salt (to taste)

Put instant pot on saute mode high

Add oil, let it get hot. Now add mustard seeds and cumin seeds, fry well

Add curry leaves, onions and garlic, saute well for 2 to 3 mins

Now add spices, bottle gourd and tamarind extract. Mix well.

Add water just enough to cover the bottle gourd pieces

Turn off saute mode. Put the lid, vent to sealing postion.

Do manual high 2 mins.

Do Natural release(preferred) or Quick release (do carefully)

Add jaggery or sugar and Put on saute mode high.

Cook for 3 to 4 mins till Jaggery dissolves and desired consistency is reached

Turn off saute mode and garnish with Cilantro – serve hot with Rice.
- Use tender bottle gourd.
- Increase cooking time by one or two minutes if the bottle gourd is little tough.
- You can use tamarind concentrate/paste instead of tamarind extract.
